Ingredients

3 medium zucchinis, thinly sliced

1 cup all-purpose flour

2 large eggs

1 cup milk

½ cup grated Parmesan cheese

½ cup fresh basil, chopped

2 cloves garlic, minced

1 tsp salt

½ tsp black pepper

¼ tsp red pepper flakes (optional)

Olive oil for greasing

Fresh basil leaves for garnish

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C). Grease a baking dish (approximately 9x13 inches) with olive oil.

Prepare the batter: In a large mixing bowl, whisk together the flour, eggs, and milk until smooth. The mixture should have a pancake batter-like consistency.

Mix in the flavors: Add in the grated Parmesan cheese, minced garlic, chopped basil, salt, black pepper, and red pepper flakes. Stir until well combined.

Add the zucchini: Fold the sliced zucchini gently into the batter, making sure each piece is well coated without breaking them apart.

Bake: Pour the zucchini mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove from the oven and let it cool for about 10 minutes. Cut into squares or slices, garnish with fresh basil leaves, and serve warm.

Enjoy: This dish can be served as a side dish or even as a light main course, paired with a salad.
