2 medium zucchinis, washed and trimmed

1 medium carrot, peeled

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh basil leaves, roughly chopped

1/4 cup toasted pine nuts

For the Citrus Vinaigrette:

3 tablespoons olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh orange juice

1 teaspoon Dijon mustard

Prepare the Zucchini Ribbons: Using a vegetable peeler or mandoline, slice the zucchinis lengthwise into thin ribbons. Place them in a large bowl.

    Add Carrot Ribbons: Similarly, slice the carrot into long ribbons and add to the bowl with the zucchini.

      Incorporate Other Ingredients: Gently fold in the halved cherry tomatoes, sliced red onion, crumbled feta cheese, and chopped basil into the zucchini and carrot mixture.

        Make the Citrus Vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, orange juice, Dijon mustard, salt, and pepper until emulsified.
