1 pre-made pie crust (store-bought or homemade)

2 medium zucchinis, thinly sliced

1 cup cherry tomatoes, halved

1 small onion, finely chopped

3 large eggs

1 cup heavy cream (or milk for a lighter version)

1 cup shredded cheese (Gruyère or cheddar work beautifully)

1 teaspoon garlic powder

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables:

      - In a large skillet, heat the olive oil over medium heat.

        - Add the chopped onion and sauté until translucent, about 3-4 minutes.

          - Add the sliced zucchini, garlic powder, dried thyme, salt, and pepper. Cook for an additional 5-7 minutes until the zucchini is slightly softened.

            - Toss in the halved cherry tomatoes and cook for another 2 minutes. Remove from heat and let cool slightly.

              Prepare the Egg Mixture:

                - In a large mixing bowl, whisk together the eggs and heavy cream (or milk) until smooth. Stir in the shredded cheese.

                  - Season with additional salt and pepper as desired.

                    Combine Ingredients:

                      - Gently fold the sautéed vegetable mixture into the egg and cheese mixture, ensuring everything is well coated.

                        Assemble the Quiche:

                          - Place the pre-made pie crust into a pie dish. Pour the zucchini and egg filling into the crust, spreading it out evenly.

                            Bake:

                              - Bake in the preheated oven for 35-40 minutes or until the center is set and the top is golden brown. A toothpick inserted in the center should come out clean.

                                Cool & Serve:

                                  - Remove the quiche from the oven and let it cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired.
