Zucchini Parmesan Poppers

2 medium zucchini

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 large egg

1/2 cup all-purpose flour

Salt and pepper to taste

Olive oil spray (or a few tablespoons of olive oil)

Marinara sauce for dipping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchini. Cut off the ends and slice them into thick sticks, about ¼ to ½ inch wide.

      Set Up the Breading Station: In three separate shallow bowls, place the flour seasoned with a pinch of salt and pepper in the first bowl, beat the egg in the second bowl, and mix the breadcrumbs, Parmesan, garlic powder, Italian seasoning, and a little more salt and pepper in the third bowl.

        Bread the Zucchini: Take each zucchini stick and dredge it first in the flour (shake off excess), then dip it in the beaten egg, and finally coat it in the breadcrumb mixture. Ensure each piece is well-covered.

          Arrange on Baking Sheet: Place the breaded zucchini sticks on the prepared baking sheet in a single layer. If desired, lightly spray with olive oil to enhance crispiness.

            Bake to Perfection: Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until the zucchini poppers are golden brown and crispy.
