3 medium zucchinis

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup shredded Monterey Jack cheese (or cheese of choice)

1 cup black beans, rinsed and drained

1 cups cherry tomatoes, halved

1/2 cup sliced black olives

1 avocado, diced

1/4 cup chopped fresh cilantro

1 jalapeño, sliced (optional)

1/2 cup sour cream or Greek yogurt (for serving)

1/2 cup salsa (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Zucchini: Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick). Then, cut each strip into 1-2 inch segments.

      Season the Zucchini: In a large bowl, toss the zucchini pieces with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

        Roast the Zucchini: Spread the zucchini in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 15-20 minutes, or until they’re tender and slightly crispy around the edges. Flip halfway through for even roasting.

          Layer the Nachos: Once the zucchini is roasted, remove it from the oven and reduce the temperature to 350°F (175°C). On an oven-safe platter or a baking dish, layer half of the roasted zucchini.

            Add Toppings: Sprinkle half of the shredded cheese over the zucchini. Then layer on the black beans, cherry tomatoes, sliced olives, and jalapeño (if using). Repeat the layers with the remaining zucchini and the rest of the toppings, finishing with the last of the cheese on top.

              Bake: Bake the layered nachos in the oven for an additional 10 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once out of the oven, top the nachos with diced avocado and fresh cilantro. Serve warm with sour cream and salsa on the side.
