2 large eggs

2 cloves garlic, minced

1/2 teaspoon black pepper

Prep the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, wring out the towel to get rid of as much liquid as possible.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, grated Parmesan cheese, chopped fresh herbs, black pepper, red pepper flakes, and baking powder. Mix well.
