1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg (optional)

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup unsweetened applesauce

1/4 cup melted coconut oil (or butter)

2 large eggs

1 teaspoon vanilla extract

1/2 cup raisins or chocolate chips (optional)

1/2 cup chopped nuts (walnuts or pecans are great choices)

Powdered sugar for dusting (optional)

Prepare the Zucchini: Preheat your oven to 350°F (175°C). Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.

      Mix Wet Ingredients: In another bowl, combine the brown sugar, granulated sugar, applesauce, melted coconut oil, eggs, and vanilla extract. Mix well until smooth and creamy.
