1 cup shredded cheddar cheese

1 teaspoon onion powder

1 teaspoon dried oregano

Preheat and Prep: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease with cooking spray.

    Prepare the Vegetables: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and twist it to squeeze out as much excess moisture as possible. This step is crucial to avoid soggy tots.

      Blanch the Broccoli: In a pot of boiling water, add the finely chopped broccoli and blanch for 2-3 minutes until bright green. Drain and immediately transfer the broccoli to an ice bath to stop cooking. Once cool, drain and chop it finely.

        Mix Ingredients Together: In a large bowl, combine the drained zucchini, blanched broccoli, shredded cheddar, breadcrumbs, grated Parmesan, beaten eggs, minced garlic, onion powder, oregano, salt, and black pepper. Mix all the ingredients well until thoroughly combined.

          Shape the Tots: Use your hands to scoop out small portions of the mixture and shape them into bite-sized tots (about 1.5 inches long) and place them on the prepared baking sheet.
