2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably Italian)

2 large eggs, beaten

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray (for baking)

1 cup marinara sauce (for dipping)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial for achieving crispy bites.

      Mix the Ingredients: In a large mixing bowl, combine the drained zucchini, shredded mozzarella cheese, grated Parmesan cheese, breadcrumbs, beaten eggs, minced garlic, dried oregano, salt, and black pepper. Mix well until fully combined.

        Form the Bites: Using your hands, scoop about 1-2 tablespoons of the mixture and form it into small, tight patties, about 1 inch thick. Place them on the prepared baking sheet, leaving space between each bite.

          Bake: Lightly spray the tops of the zucchini bites with olive oil to help them brown. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside. Flip them halfway through for even cooking.

            Heat the Marinara: While the bites are baking, warm the marinara sauce in a small saucepan over low heat, stirring occasionally.
