1 pound fresh salmon fillet, skinless and cut into 1-inch cubes

2 tablespoons fresh ginger, grated

1 orange, zested and juiced

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons honey

1 tablespoon sesame oil

2 garlic cloves, minced

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Wooden skewers (soaked in water for 30 minutes)

Instructions
 

Marinate the Salmon: In a medium bowl, whisk together the grated ginger, orange zest, orange juice, soy sauce, honey, sesame oil, minced garlic, rice vinegar, and red pepper flakes (if using). Season the mixture with a pinch of salt and pepper. Add the salmon cubes to the marinade, gently tossing to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavors.

    Prepare the Skewers: Preheat your grill or grill pan to medium-high heat. If using wooden skewers, ensure they have been soaked in water to prevent burning. Thread the marinated salmon cubes onto the skewers, about 3-4 pieces per skewer, leaving a little space between each piece for even cooking.

      Grill the Skewers: Lightly oil the grill grates or apply cooking spray to prevent sticking. Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the salmon is opaque in the center and has nice grill marks. Be cautious not to overcook the salmon to keep it tender and juicy.
