Zingy Orange Ginger Salmon Skewers

Ingredients
  

1 lb (450g) salmon fillets, skin off and cubed

2 oranges (zest and juice)

2 tablespoons fresh ginger, grated

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh cilantro, for garnish

Skewers (soaked if wooden)

Instructions
 

Marinate the Salmon: In a mixing bowl, combine the zest and juice of the two oranges, grated ginger, soy sauce, honey, rice vinegar, sesame oil, and minced garlic. Whisk until well combined.

    Prepare the Salmon: Add the cubed salmon to the marinade, season with salt and pepper, and gently toss to ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes to let the flavors meld.

      Preheat the Grill: If using a grill, heat it to medium-high. If using an oven, preheat to 400°F (200°C) and line a baking sheet with parchment paper.

        Skewer the Salmon: Thread the marinated salmon pieces onto skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: If grilling, place the skewers directly on the grill and cook for about 3-4 minutes on each side, or until the salmon is cooked through and has nice grill marks. If baking, place the skewers on the prepared baking sheet and bake for about 15 minutes, turning halfway through.

            Garnish and Serve: Once cooked, remove the skewers from the grill/oven. Garnish with freshly chopped cilantro and additional orange zest if desired. Serve warm with your choice of rice or a fresh salad.
