Ingredients

8 oz rice noodles (or your choice of noodles)

2 tablespoons vegetable oil (e.g., canola or sesame oil)

1 tablespoon minced ginger

2 cloves garlic, minced

1 cup bell peppers, sliced (red, yellow or green)

1 cup snap peas, trimmed

1 cup shredded carrots

1 cup broccoli florets

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons oyster sauce (or mushroom sauce for vegetarian/vegan)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon chili paste (optional, adjust to your spice preference)

2 green onions, chopped

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions

Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat.

Sauté Aromatics: Add minced ginger and garlic to the hot oil, and sauté for about 30 seconds until fragrant.

Add Vegetables: Toss in the bell peppers, snap peas, shredded carrots, and broccoli. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

Combine Sauces: In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, sesame oil, and chili paste (if using). Pour this mixture over the sautéed vegetables, and stir to combine.

Incorporate Noodles: Add the cooked noodles to the stir-fry. Gently toss everything using tongs or a spatula, ensuring the noodles are fully coated in the sauce and heated through.

Finish and Serve: Remove from heat. Stir in the chopped green onions. Garnish with sesame seeds and cilantro if desired. Serve immediately and enjoy the zingy flavors!
