1 lb (450g) large shrimp, peeled and deveined

2 tablespoons olive oil

Zest of 1 lime

Juice of 2 limes

2 cloves garlic, minced

1 teaspoon honey or maple syrup

1 teaspoon chili powder

Salt and pepper, to taste

1 tablespoon fresh cilantro, chopped (for garnish)

For the Coconut Rice:

1 cup jasmine rice

1 cup coconut milk

1 cup water

1 tablespoon sugar

1/2 teaspoon salt

1/4 cup shredded coconut (toasted, for garnish)

For the Bowls:

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup mixed greens (like arugula or spinach)

Lime wedges (for serving)

Instructions
 

Prepare the Coconut Rice: In a medium saucepan, combine the jasmine rice, coconut milk, water, sugar, and salt. Bring to a boil over medium-high heat, then reduce the heat to low and cover the pot. Allow to simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed. Once cooked, fluff with a fork and set aside.

    Marinate the Shrimp: In a large bowl, mix together the olive oil, lime zest, lime juice, minced garlic, honey, chili powder, salt, and pepper. Add the shrimp and toss well to coat. Let the shrimp marinate for about 15 minutes to absorb the flavors.

      Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes per side, until the shrimp is pink, opaque, and cooked through. Be careful not to overcook them.
