Zesty Baked Tacos with Ground Beef

Ingredients
  

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1 tsp onion powder, 1/2 tsp garlic powder, salt, and pepper to taste)

1 can (14 oz) diced tomatoes with green chilies, drained

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1/2 cup cilantro, chopped

12 taco shells (hard or soft)

1 cup shredded cheese (cheddar or Mexican blend)

Sour cream, for serving

Fresh lime wedges, for serving

Optional toppings: sliced jalapeños, diced avocado, salsa, lettuce

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Cook for about 3-4 minutes until the onion becomes translucent and fragrant.

        Add Seasoning: Sprinkle the taco seasoning over the beef mixture and stir to combine. Add the drained diced tomatoes, black beans, corn, and half of the cilantro. Mix well and cook for another 3-5 minutes until everything is heated through.

          Fill Taco Shells: Arrange taco shells in a large baking dish or on a lined baking sheet. Spoon the beef mixture generously into each taco shell.

            Top with Cheese: Sprinkle shredded cheese evenly over the filled taco shells.

              Bake: Place the filled taco shells in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

                Serve: Remove the tacos from the oven and let them cool slightly. Top with remaining cilantro and any optional toppings like jalapeños, diced avocado, and lettuce.

                  Garnish and Enjoy: Serve the baked tacos hot with dollops of sour cream and lime wedges on the side for squeezing.
