1/2 cup brown sugar, packed

1/2 cup pumpkin puree (canned or fresh)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup milk (dairy or plant-based)

1/4 cup coconut oil, melted

1 tsp vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/3 cup raisins or chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

    Prepare the Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Mix well to ensure an even distribution of the leavening agents and spices.

      Mix the Wet Ingredients: In another bowl, whisk together the brown sugar, pumpkin puree, honey (or maple syrup), applesauce, milk, melted coconut oil, and vanilla extract until smooth and well combined.
