2 cups shredded cooked chicken (rotisserie chicken works well)

1 can (15 oz) white beans (e.g., cannellini or great northern), drained and rinsed

1 can (4 oz) diced green chilies

1 medium onion, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

2 cups chicken broth

1 1/2 cups sour cream

1 cup shredded Monterey Jack cheese (plus extra for topping)

1/4 cup fresh cilantro, chopped (for garnish)

1 cup crushed tortilla chips (for an added crunch)

1 tablespoon olive oil or cooking spray

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, sauté the diced onion until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.

      Combine Ingredients: Stir in the shredded chicken, white beans, diced green chilies, ground cumin, chili powder, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes to warm through.

        Add the Broth and Sour Cream: Gradually pour in the chicken broth and sour cream, stirring well to combine all ingredients. Bring the mixture to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld together.

          Assemble the Bake: In a greased (or sprayed) 9x13 inch baking dish, spread half of the crushed tortilla chips evenly on the bottom.
