Ingredients

2 cups all-purpose flour

1 cup canned pumpkin puree

1 cup fresh spinach, chopped

2 tablespoons olive oil

1 tablespoon honey or maple syrup

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon nutmeg

½ teaspoon garlic powder

½ cup grated Parmesan cheese (optional)

¼ cup milk (or plant-based milk)

Sesame seeds or pumpkin seeds for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.

Mix the Dry Ingredients: In a large mixing bowl, sift together the flour, baking soda, baking powder, salt, black pepper, nutmeg, and garlic powder. Combine them well and set aside.

Prepare the Wet Ingredients: In another bowl, whisk together the pumpkin puree, olive oil, honey (or maple syrup), and milk until well combined and smooth.

Combine Ingredients: Gradually add the wet mixture to the dry mixture, stirring with a spatula or wooden spoon until just combined. Avoid overmixing.

Add Spinach and Cheese: Gently fold in the chopped spinach and grated Parmesan cheese. The spinach should be evenly distributed through the batter.

Transfer to Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle sesame seeds or pumpkin seeds on top for added texture and crunch.

Bake the Bread: Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown.

Cool and Serve: Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Slice and serve warm with butter or as an accompaniment to soups and salads.
