1 medium butternut squash, peeled and cubed

2 large apples (such as Granny Smith or Honeycrisp), cored and diced

1 tablespoon olive oil

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 tablespoon maple syrup (optional, for added sweetness)

½ cup chopped walnuts or pecans

1 cup vegetable broth (or chicken broth)

Salt and pepper to taste

Fresh parsley or thyme for garnish

Prepare the Butternut Squash: Preheat your oven to 400°F (200°C). Start by peeling and cubing the butternut squash into approximately 1-inch pieces.

    Season: In a large mixing bowl, toss the butternut squash cubes with olive oil, ground cinnamon, nutmeg, salt, and pepper. Make sure the squash is well-coated with the oil and spices.

      Roast: Spread the seasoned squash on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes or until tender and slightly caramelized, flipping halfway through for even cooking.

        Cook the Apples: While the squash is roasting, heat a medium saucepan over medium heat. Add the diced apples along with a splash of vegetable broth. Sauté for 5-7 minutes until the apples are soft and slightly golden.

          Combine: Once the squash is roasted, transfer it to the saucepan with the cooked apples. Add the remaining vegetable broth and maple syrup (if using) to the mixture and stir gently to combine.
