Vibrant Mediterranean Stuffed Peppers

4 large bell peppers (red, yellow, or orange for color)

1 cup cooked quinoa (or couscous)

1 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped (plus extra for garnish)

1/4 cup pine nuts, toasted

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Optional: 1/2 teaspoon red pepper flakes for added heat

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Wash the bell peppers, slice the tops off, and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Mix the Filling: In a large bowl, combine the cooked quinoa, cherry tomatoes, black olives, feta cheese, parsley, pine nuts, olive oil, oregano, paprika, salt, and pepper. If you like a kick, add the red pepper flakes.

        Stuff the Peppers: Carefully spoon the filling into each pepper, pressing down gently to pack it in. Fill each pepper generously until overflowing if desired.

          Bake the Peppers: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and slightly charred.

            Serve: Remove from the oven and let cool slightly. Garnish with extra parsley before serving. Enjoy them warm or at room temperature.
