1 medium cooked beetroot (peeled and diced)

1 can (15 oz) chickpeas (drained and rinsed)

2 tablespoons tahini

2 tablespoons olive oil (plus extra for drizzling)

1 garlic clove (minced)

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

Salt and pepper to taste

4 slices of whole-grain or sourdough bread

Fresh herbs (like dill or parsley, for garnish)

Toasted sesame seeds or pumpkin seeds (for garnish)

Optional toppings: avocado slices, microgreens, or radish slices

Instructions
 

Make the Beet Hummus: In a food processor, combine the cooked beetroot, chickpeas, tahini, olive oil, minced garlic, lemon juice, and cumin. Blend until smooth, scraping down the sides as necessary. If the mixture is too thick, add a tablespoon of water at a time until you reach your desired consistency. Season with salt and pepper to taste.
