8 large eggs

1 cup milk (dairy or non-dairy)

1 cup diced bell peppers (red, green, and yellow)

1 cup chopped spinach

1 cup diced zucchini

1/2 cup chopped onion

1/2 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar, mozzarella, or a dairy-free alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh herbs for garnish (optional: parsley, basil, or chives)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and grease a 9x13 inch baking dish or a similar sized oven-safe dish with cooking spray or a light brush of olive oil.

    Prepare the Veggies: In a large mixing bowl, combine the diced bell peppers, chopped spinach, diced zucchini, chopped onion, and halved cherry tomatoes. Toss them together so they are well mixed.

      Whisk the Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, oregano, salt, and black pepper until well combined and frothy.

        Layer the Bake: Spread the veggie mixture evenly in the prepared baking dish. Pour the egg mixture over the veggies, ensuring they are completely covered. Gently lift some of the veggies to ensure an even distribution.
