6 large eggs

1/4 cup milk

1 cup bell peppers (diced, mixed colors)

1/2 cup red onion (finely chopped)

1 cup fresh spinach (chopped)

1 cup shredded cheese (cheddar or Mexican blend)

1 teaspoon olive oil

1 teaspoon garlic powder

Salt & pepper to taste

6 small flour tortillas (or mini tortillas)

Optional toppings: salsa, avocado, hot sauce

Instructions
 

Preheat your oven: Set it to 375°F (190°C) and lightly grease a mini muffin tin.

    Prepare the egg mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, and a pinch of salt and pepper until fully combined. Set aside.

      Cook the veggies: In a skillet, heat the olive oil over medium heat. Add the diced bell peppers and onions, sautéing for about 5-7 minutes until they soften. Add the chopped spinach and cook for an additional 1-2 minutes until wilted. Remove from heat.

        Combine mixtures: Stir the sautéed veggies into the egg mixture along with the shredded cheese, ensuring even distribution.

          Prepare tortillas: If using larger tortillas, cut them into quarters or halves (depending on desired size). Gently press the tortilla pieces into the greased muffin tin slots to form a pocket.

            Fill the cups: Carefully pour the egg and veggie mixture into each tortilla cup, filling them about three-quarters full.

              Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the egg is set and the tops are slightly golden.

                Cool and serve: Remove from the oven and allow to cool for a few minutes before gently removing the burrito bites from the tin. Serve warm with your choice of salsa, avocado, or hot sauce!
