2 cups all-purpose flour

2 tablespoons sugar

1 teaspoon active dry yeast

½ teaspoon salt

1 cup coconut cream (chilled)

¼ cup almond milk (warm)

1 tablespoon lemon juice

½ teaspoon vanilla extract

For the Strawberry Filling:

2 cups fresh strawberries (hulled and diced)

2 tablespoons maple syrup

1 tablespoon cornstarch

1 tablespoon lemon juice

For the Vegan Cream Cheese Glaze:

½ cup vegan cream cheese (softened)

½ cup powdered sugar

1 tablespoon almond milk

½ teaspoon vanilla extract

Prepare the Danish Dough: In a large mixing bowl, combine the flour, sugar, yeast, and salt. Mix well.

    In a separate bowl, whisk together the coconut cream, warm almond milk, lemon juice, and vanilla extract. Slowly pour the liquid mixture into the dry ingredients, stirring until a shaggy dough forms.

      Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Form a ball, place it in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Prepare the Strawberry Filling: In a saucepan over medium heat, combine the diced strawberries, maple syrup, cornstarch, and lemon juice. Cook for about 5-7 minutes until the strawberries soften and the mixture thickens. Remove from heat and let cool.

          Assemble the Danish: Preheat your oven to 375°F (190°C). Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately ¼-inch thick. Cut the dough into 4 squares.
