For the sweet potato topping:

2 large sweet potatoes, peeled and diced

2 tablespoons unsalted butter

1/4 cup milk (or non-dairy alternative)

Salt and pepper, to taste

1 teaspoon ground cinnamon (optional)

For the filling:

1 pound ground turkey

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup green peas (fresh or frozen)

1 cup corn (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup chicken or vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

Olive oil, for cooking

Instructions
 

Prepare the Sweet Potato Topping:

    - In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 15-20 minutes, until tender.

      - Drain the sweet potatoes and return them to the pot. Add the butter, milk, salt, pepper, and cinnamon (if using). Mash until smooth and creamy. Set aside.

        Cook the Filling:

          - In a large skillet, heat a drizzle of olive oil over medium heat. Add the onions and garlic, and sauté until translucent, about 3-4 minutes.

            - Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 6-8 minutes.

              - Stir in the diced carrots, green peas, and corn. Cook for another 5 minutes until the vegetables are tender.

                - Add the tomato paste, Worcestershire sauce, chicken broth, thyme, rosemary, salt, and pepper. Stir to combine and bring the mixture to a simmer. Cook for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.

                  Assemble the Pie:

                    - Preheat your oven to 400°F (200°C).

                      - In a baking dish, spread the turkey and vegetable filling evenly on the bottom. Spoon the sweet potato mash over the top, spreading it out to cover the filling completely. You can create a decorative pattern with a fork if you like.

                        Bake:

                          - Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is slightly golden and the edges are bubbling.

                            Serve:
