Tuna Tacos with Lime Slaw

2 cans (5 oz each) of high-quality tuna in olive oil, drained

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

1 teaspoon hot sauce (adjust to taste)

1 tablespoon fresh cilantro, chopped

1/4 teaspoon garlic powder

Salt and pepper to taste

Juice of 1/2 lime

For the Lime Slaw:

2 cups green cabbage, shredded

1 cup purple cabbage, shredded

1/2 cup carrots, grated

1/2 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon apple cider vinegar

1 tablespoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

For Assembling:

8 small corn or flour tortillas

Slices of avocado (optional)

Lime wedges for serving

Prepare the Tuna Filling: In a medium mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, hot sauce, chopped cilantro, garlic powder, and lime juice. Season with salt and pepper to taste. Mix gently until all ingredients are well incorporated.

    Make the Lime Slaw: In a large bowl, combine the shredded green cabbage, purple cabbage, grated carrots, and chopped cilantro. In a small bowl, whisk together the juice of 1 lime, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss well to coat evenly.
