Tuna Melt Stuffed Tomatoes

4 large ripe tomatoes

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise

1/4 cup finely chopped celery

1/4 cup finely chopped red onion

1/2 teaspoon Dijon mustard

1/4 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1 tablespoon fresh parsley, chopped

Olive oil for drizzling

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Tomatoes: Cut the tops off the tomatoes and scoop out the insides with a spoon, leaving about 1/2 inch of flesh. Reserve the pulp for the filling and place the hollow tomatoes in a baking dish.

      Mix Filling: In a medium bowl, combine the drained tuna, mayonnaise, chopped celery, chopped red onion, Dijon mustard, garlic powder, and salt and pepper. Mix until fully incorporated.

        Incorporate Cheese and Parsley: Gently fold in half of the shredded cheddar cheese and the chopped parsley into the tuna mixture until well combined.

          Stuff Tomatoes: Carefully spoon the tuna mixture into each hollowed tomato, packing it slightly to ensure they are well-filled.

            Top with Cheese: Sprinkle the remaining cheddar cheese on top of each stuffed tomato.

              Bake: Drizzle a little olive oil over the stuffed tomatoes and place the baking dish in the preheated oven. Bake for about 20-25 minutes or until the tomatoes are tender and the cheese is melted and bubbly.

                Serve: Remove from the oven and let cool slightly. Serve warm as a delightful appetizer or light meal.
