Ingredients

1 cup fresh pineapple, diced

1 medium red bell pepper, finely chopped

1 jalapeño pepper, seeded and minced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Instructions

Prepare the Ingredients: Start by peeling and dicing the fresh pineapple into small, even pieces. Finely chop the red bell pepper, red onion, and cilantro, and minced the jalapeño pepper (be sure to wear gloves if you’re sensitive to spice!).

Mix the Base: In a medium-sized bowl, combine the diced pineapple, red bell pepper, jalapeño, red onion, and cilantro. Use a spatula or spoon to gently mix them together.

Add the Dressing: Squeeze the fresh lime juice over the mixture. Add in the honey or agave syrup, then season with salt and pepper. Stir gently to coat all ingredients in the lime juice and honey.

Let It Marinate: Cover the bowl with plastic wrap and let the salsa sit in the refrigerator for at least 30 minutes. This allows the flavors to meld together beautifully.

Serve and Enjoy: Once chilled, give the salsa a quick stir before serving. Enjoy with tortilla chips, grilled fish, tacos, or as a flavorful topping for chicken!
