Ingredients

2 cups cooked jasmine rice (preferably day-old)

1 cup fresh pineapple, diced

1/2 cup red bell pepper, diced

1/2 cup green peas (fresh or frozen)

1/2 cup carrots, diced

1/4 cup green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon fresh ginger, minced

1/2 teaspoon red chili flakes (adjust to taste)

1/4 cup cashews or peanuts, toasted (for garnish)

Fresh cilantro or basil, for garnish

Instructions

Preparation of Ingredients: Begin by gathering all your ingredients. If using day-old rice, break up any clumps with a fork to ensure even cooking. Dice the pineapple, bell pepper, carrots, and chop the green onions.

Stir-Fry the Aromatics: In a large wok or non-stick skillet, heat the vegetable oil over medium-high heat. Add minced garlic and ginger, stirring constantly for about 30 seconds until fragrant.

Add Vegetables: Toss in the diced bell pepper, carrots, and peas. Sauté for 3-4 minutes until the vegetables are tender but still crisp.

Incorporate Pineapple: Add the fresh pineapple, mixing well with the vegetables. Sauté for an additional 2-3 minutes, allowing the natural sugars from the pineapple to caramelize slightly.

Fry the Rice: Push the vegetable and pineapple mixture to one side of the wok. In the empty space, pour in the cooked rice. Spread it out and let it fry undisturbed for about 2 minutes. This helps to get a bit of crispiness.

Combine: Add the soy sauce, oyster sauce (if using), sesame oil, and red chili flakes over the rice. Mix everything together gently, ensuring the rice is evenly coated with the sauces. Stir-fry for another 2-3 minutes until heated through.

Finish with Green Onions: Stir in the chopped green onions, reserving a bit for garnishing. Remove from heat.

Serve: Transfer the fried rice to a serving platter or individual bowls. Garnish with toasted cashews or peanuts and additional green onions. Top with fresh cilantro or basil for a burst of flavor.

Enjoy: Serve your Tropical Pineapple Fried Rice warm, perhaps with lime wedges on the side for an extra citrusy kick!
