2 ripe avocados, diced

1 large ripe mango, diced

1 cup cherry tomatoes, halved

1 small red onion, finely diced

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and finely chopped (optional for heat)

Juice of 2 limes

2 tablespoons extra virgin olive oil

Salt and pepper to taste

1/4 cup crumbled feta cheese (optional)

1/4 cup toasted pumpkin seeds for crunch

Prepare the Ingredients: Start by washing your produce thoroughly. Dice the avocados and mango, halve the cherry tomatoes, and finely chop the red onion and cilantro. If using, deseed and chop the jalapeño.
