8 ounces whole wheat spaghetti

2 medium zucchinis, spiralized or sliced into thin rounds

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.

      Add Tomatoes and Zucchini: Stir in the halved cherry tomatoes and spiralized/zucchini rounds. Cook for about 5-7 minutes, or until the tomatoes start to soften and the zucchini is tender, stirring occasionally.

        Season: Sprinkle in the dried oregano, red pepper flakes (if using), salt, and pepper. Mix well to combine all the flavors.
