Tomato Zucchini Gratin

3 medium zucchinis, thinly sliced

4 medium ripe tomatoes, thinly sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

3 tablespoons olive oil

1 cup fresh breadcrumbs

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Veggies: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once heated, add the chopped onion and sauté until softened (about 4-5 minutes). Add the minced garlic and cook for another minute until fragrant. Remove from heat and set aside.

      Layer the Vegetables: In a 9x13-inch baking dish, spread half of the sautéed onion and garlic mixture evenly on the bottom. Then, layer half of the zucchini slices, followed by half of the tomato slices. Sprinkle with half of the basil, oregano, salt, and pepper.

        Add Cheese: Sprinkle half of the mozzarella and Parmesan cheeses over the first layer of vegetables.

          Repeat Layers: Add the remaining onion and garlic mixture, then layer the remaining zucchini and tomato slices. Top with the remaining basil, oregano, salt, and pepper, followed by the rest of the mozzarella and Parmesan cheese.

            Add Breadcrumbs: In a small bowl, mix the fresh breadcrumbs with the remaining tablespoon of olive oil. Sprinkle the breadcrumb mixture evenly over the top of the gratin.

              Bake: Cover the baking dish loosely with foil and place it in the preheated oven. Bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the vegetables are tender.

                Serve: Let the gratin cool for about 10 minutes before serving. This dish can be served as a delightful side or as a main course with crusty bread.
