Tomato Zucchini Gratin

2 medium zucchinis, thinly sliced

2 medium tomatoes, thinly sliced

1 large onion, thinly sliced

2 cloves garlic, minced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the vegetables: In a large skillet over medium heat, add the olive oil and sauté the sliced onion and minced garlic until the onion becomes translucent, about 5 minutes. Season with salt, pepper, oregano, and thyme. Remove from heat.

      Layer the gratin: In a greased 9x13 inch baking dish, start layering the vegetables. Begin with half of the sautéed onions and garlic as the first layer. Next, arrange half of the zucchini slices followed by half of the tomato slices. Season lightly with salt and pepper. Repeat the layers with the remaining onions, zucchini, and tomatoes.

        Pour the cream: Drizzle the heavy cream evenly over the top of the layered vegetables.

          Add the cheese: Sprinkle the grated mozzarella and Parmesan cheese over the top layer of the vegetables.

            Bake the gratin: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Garnish and serve: Let the gratin cool for a few minutes before slicing. Garnish with fresh basil leaves for added flavor and serve warm.
