1 French baguette (or ciabatta), sliced into 1/2-inch thick pieces

2 large ripe tomatoes, diced

2 ripe peaches, diced (peeled, if desired)

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic vinegar

1 tablespoon extra virgin olive oil

Salt and pepper, to taste

1/2 cup crumbled feta cheese (optional)

Extra basil leaves for garnish

Prepare the Bread: Preheat your oven to 400°F (200°C). Place the sliced baguette on a baking sheet and brush each side lightly with olive oil. Toast in the oven for about 5-7 minutes, or until golden brown and crisp. Keep an eye on them to avoid burning.
