9 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

½ cup mozzarella balls (bocconcini), halved

¼ cup red onion, finely diced

¼ cup extra virgin olive oil

2 tbsp balsamic vinegar

1 tsp garlic powder

Salt and pepper, to taste

Optional: 1 tsp Italian seasoning

Freshly grated Parmesan cheese, for serving

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, typically about 3-4 minutes until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prep the Vegetables: While the tortellini cooks, wash the cherry tomatoes and basil leaves. Halve the cherry tomatoes and roughly chop the basil.

      Combine Ingredients: In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, chopped basil, mozzarella balls, and diced red onion.

        Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, Italian seasoning (if using), salt, and pepper until well blended.

          Dress the Salad: Pour the dressing over the tortellini mixture and toss gently to ensure everything is evenly coated.
