2 boneless, skinless chicken breasts

1 cup jasmine rice

1 ¾ cups water or chicken broth

½ cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 green onions, chopped (for garnish)

1 cup mixed vegetables (like broccoli, bell peppers, and snap peas)

1 teaspoon sesame seeds (optional)

Salt and pepper to taste

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice with 1 ¾ cups of water or chicken broth. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 15 minutes until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Prepare the Chicken: While the rice cooks, slice the chicken breasts into bite-sized pieces. Season with salt and pepper.

      Cook the Chicken: In a large skillet or wok, heat the vegetable oil and sesame oil over medium heat. Add the chicken pieces and stir-fry for about 5-7 minutes, or until the chicken is cooked through and lightly browned.
