Ingredients

1 lb boneless, skinless chicken thighs, diced

1 cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 small red bell pepper, diced

1 small carrot, julienned

1 green onion, chopped

1 tablespoon toasted sesame seeds

Salt and pepper, to taste

1 head of butter lettuce or romaine lettuce, separated into leaves

Optional toppings: sliced cucumber, shredded coconut, chopped peanuts, or cilantro

Instructions

Marinate the Chicken: In a bowl, combine the diced chicken thighs, half of the teriyaki sauce, minced garlic, and grated ginger. Marinate for at least 30 minutes in the refrigerator to let the flavors meld.

Cook the Chicken: Heat sesame oil in a large skillet over medium-high heat. Add the marinated chicken thighs and cook until they are golden brown and cooked through, about 8-10 minutes. Add salt and pepper to taste.

Add Vegetables: Once the chicken is cooked, stir in the diced red bell pepper and julienned carrot. Cook for an additional 2-3 minutes until the vegetables are just tender.

Combine with Sauce: Pour in the remaining teriyaki sauce and stir well to combine. Allow it to cook for another 2 minutes, letting the sauce thicken slightly.

Prepare the Lettuce Wraps: While the chicken mixture is cooking, prepare the lettuce leaves by washing them and patting them dry.

Assemble the Wraps: Spoon a generous amount of the teriyaki chicken mixture onto each lettuce leaf. Top with chopped green onions and toasted sesame seeds. If desired, add optional toppings such as sliced cucumber, shredded coconut, chopped peanuts, or cilantro for added flavor and crunch.

Serve: Enjoy the teriyaki chicken lettuce wraps immediately while they are fresh and warm, either as a main dish or appetizer.
