1 lb boneless, skinless chicken thighs, diced

2 tablespoons sesame oil

4 cloves garlic, minced

1 inch ginger, minced

1/4 cup soy sauce (low sodium)

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 cup bell peppers, diced (red, yellow, or orange for color)

1/4 cup green onions, chopped (plus more for garnish)

1/4 cup shredded carrots (optional)

1 head of butter lettuce or iceberg lettuce, leaves separated

Sesame seeds, for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, combine diced chicken thighs, soy sauce, honey, rice vinegar, garlic, and ginger. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to absorb all the flavors.

    Cook the Chicken: Heat sesame oil in a large skillet over medium-high heat. Add the marinated chicken (reserve the marinade) and cook for about 5-7 minutes or until the chicken is fully cooked and slightly browned.

      Make the Sauce: Pour the reserved marinade into the skillet and bring it to a simmer. Whisk in the cornstarch slurry and continue to cook for another 2-3 minutes, or until the sauce thickens and glazes the chicken.

        Add Vegetables: Stir in the diced bell peppers and shredded carrots (if using) and cook for another 2 minutes to soften the veggies slightly without losing their crunch.

          Assemble Lettuce Cups: On a large serving platter, arrange the individual lettuce leaves. Spoon the teriyaki chicken mixture into each leaf.
