1 lb ground chicken (or diced chicken thighs)

1 tablespoon soy sauce

1 teaspoon sesame oil

2 cloves garlic, minced

1 inch ginger, finely grated

1 cup bell peppers, finely diced (red and yellow for color)

1/2 cup green onions, chopped (plus extra for garnish)

1/4 cup shredded carrots

1/4 cup water chestnuts, diced (optional for crunch)

1 head of butter lettuce or iceberg lettuce, leaves separated

Sesame seeds for garnish

Fresh cilantro or mint leaves for garnish (optional)

Lime wedges for serving

Instructions
 

Prepare the Chicken: In a large skillet over medium heat, add the sesame oil. Once hot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.

    Cook the Chicken: Add the ground or diced chicken to the skillet and cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes).

      Add Flavor: Stir in the teriyaki sauce and soy sauce. If using diced chicken, allow the sauce to simmer for an additional 3-5 minutes until everything is well coated.
