Teriyaki Chicken Bowls

1/2 cup soy sauce

1/4 cup brown sugar

1 tablespoon rice vinegar

1 tablespoon mirin (optional)

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

For the Chicken and Bowls:

1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 tablespoon vegetable oil

2 cups cooked jasmine rice (or brown rice for a healthier option)

1 cup broccoli florets (steamed)

1 red bell pepper, sliced

1 cup snap peas or snow peas, trimmed

2 green onions, sliced

Sesame seeds for garnish

Optional toppings: pickled ginger, seaweed, or avocado slices

Instructions
 

Make the Teriyaki Sauce: In a small saucepan, combine the soy sauce, brown sugar, rice vinegar, mirin, sesame oil, minced garlic, and grated ginger. Heat over medium heat, stirring until the sugar dissolves. Once combined, bring to a simmer and let it cook for 2-3 minutes. Stir in the cornstarch mixture and continue to cook until the sauce thickens (about 1-2 minutes). Remove from heat and set aside.

    Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and sauté for about 6-8 minutes or until they’re golden brown and cooked through. Make sure to stir occasionally to evenly cook the chicken.

      Add the Sauce: Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Stir well to coat the chicken, allowing it to soak in the flavors for an additional 2-3 minutes.

        Prepare the Bowls: In serving bowls, layer the cooked jasmine rice at the bottom. Top with the teriyaki chicken, followed by the steamed broccoli, sliced red bell pepper, and snap peas.
