Ingredients

1 cup chili (homemade or canned, without beans)

1 cup shredded cheddar cheese

2 large flour tortillas

1/2 cup diced onions

1/2 cup sour cream

1 tsp taco seasoning

1/4 cup sliced jalapeños (optional for extra heat)

1 cup cooked rice (white or Spanish)

Olive oil or non-stick spray (for cooking)

Instructions

Prepare the Chili: If using homemade chili, make it ahead of time according to your favorite recipe, or simply heat up the canned chili in a saucepan on medium heat until warmed through. Add taco seasoning for extra flavor.

Warm the Tortillas: Lightly heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are warm and pliable. This will make them easier to roll.

Assemble the Burritos: On each tortilla, spread 1/2 cup of the prepared chili down the center. Top with 1/2 cup cooked rice, then sprinkle with 1/2 cup shredded cheddar cheese. If desired, add diced onions and sliced jalapeños for extra crunch and heat.

Add Sour Cream: Drizzle or spread 1/4 cup of sour cream on top of the filling, giving a creamy texture to the burrito.

Roll the Burritos: Fold in the sides of the tortilla over the filling, then carefully roll from the bottom up to enclose all the ingredients tightly. Make sure to secure the filling tightly as you roll.

Cook the Burritos: Preheat a skillet over medium heat and lightly coat with olive oil or non-stick spray. Place the rolled burrito seam-side down in the skillet. Cook for about 3-4 minutes until golden brown and crispy, then flip and cook for an additional 3-4 minutes on the other side.

Serve: Remove from skillet, and let cool for a minute. Slice the burritos in half, drizzle with more sour cream if desired, and serve with additional jalapeños or hot sauce for an extra kick. Enjoy your Taco Bell copycat creation!
