Sweet & Spicy Pineapple Chicken Kabobs

1 lb chicken breast, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

2 tablespoons olive oil

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust for desired spiciness)

1 tablespoon minced garlic

1 teaspoon ground ginger

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, soy sauce, honey, sriracha, minced garlic, ground ginger, salt, and pepper. Add the chicken cubes and mix well to coat. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

    Prepare the Skewers: While the chicken marinates, prepare your skewers with alternating pieces of marinated chicken, pineapple, red bell pepper, green bell pepper, and red onion. Aim for a colorful assembly and make sure not to overcrowd the skewers.

      Preheat the Grill: Heat your grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.

        Grill the Kabobs: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F) and has nice grill marks. The pineapple and vegetables should be tender and slightly charred.
