Sweet Potato & Spinach Bake

2 medium sweet potatoes, peeled and thinly sliced

4 cups fresh spinach, washed and chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon nutmeg

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Spinach: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Season with salt, pepper, and dried oregano. Remove from heat and set aside.

      Mix the Cheese Filling: In a large mixing bowl, combine the ricotta cheese, eggs, half of the mozzarella, half of the Parmesan, and nutmeg. Mix until well combined. It’s okay if there are a few lumps of ricotta.

        Layer the Dish: In a greased 9x13 inch baking dish, start layering. Begin with a layer of sliced sweet potatoes, followed by half of the spinach mixture, and then half of the ricotta cheese mixture. Repeat the layers, ending with a layer of sweet potatoes on top.

          Final Topping: Spread the remaining ricotta cheese mixture on top of the last layer of sweet potatoes. Sprinkle the remaining mozzarella and Parmesan cheese over the top.

            Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the sweet potatoes are tender when pierced with a fork.

              Garnish and Serve: Allow the bake to cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
