Sweet Potato Quinoa Burgers

Ingredients
  

1 cup quinoa, rinsed

2 medium sweet potatoes, peeled and cubed

1 can (15 oz) black beans, drained and rinsed

1/2 cup finely chopped red onion

1/2 cup grated carrots

2 cloves garlic, minced

1/2 cup breadcrumbs (preferably whole wheat)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

2 tablespoons fresh cilantro or parsley, chopped (optional)

Olive oil for cooking

Burger buns and toppings (lettuce, avocado, tomato, etc.) for serving

Instructions
 

Cook Quinoa: In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Set aside to cool slightly.

    Prepare Sweet Potatoes: While the quinoa is cooking, steam or boil the cubed sweet potatoes until tender, about 10-15 minutes. Drain and mash them in a large mixing bowl.

      Combine Ingredients: To the mashed sweet potatoes, add the black beans (mashed slightly), chopped red onion, grated carrots, minced garlic, cooked quinoa, breadcrumbs, cumin, smoked paprika, chili powder, salt, and pepper. If using, add the chopped cilantro or parsley. Mix until well combined.

        Form Patties: With clean hands, form the mixture into patties (about 1/2 inch thick). You should have approximately 8-10 burgers, depending on the size.

          Cook the Burgers: Heat a tablespoon of olive oil in a large skillet over medium heat. Once hot, add the patties in batches, being careful not to overcrowd the pan. Cook for 4-5 minutes on each side, or until golden brown and crispy. Add more oil as needed for subsequent batches.

            Assemble and Serve: Toast the burger buns if desired. Place each quinoa burger on a bun and top with your favorite toppings such as lettuce, avocado, tomato, or a dollop of yogurt or sauce for added flavor. Serve warm and enjoy!
