Sweet Corn & Zucchini Salad

Ingredients
  

2 cups fresh sweet corn (kernels cut from about 3 ears of corn)

2 medium zucchinis, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon honey

Salt and pepper to taste

Instructions
 

Prepare the Corn: If using fresh corn, boil water in a pot. Add the corn and cook for about 3-5 minutes until tender. Drain and let it cool. Alternatively, if using frozen corn, simply thaw it under running water or microwave it until warm.

    Sauté the Zucchini: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced zucchini and sauté for about 3-4 minutes until slightly softened but still crisp. Remove from heat and allow to cool.

      Combine Ingredients: In a large salad bowl, combine the cooled sweet corn, sautéed zucchini, diced red bell pepper, halved cherry tomatoes, and chopped red onion.

        Make the Dressing: In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lime juice, honey, salt, and pepper. Adjust the seasoning according to taste.

          Toss the Salad: Pour the dressing over the salad mixture and gently toss until everything is well-coated. Fold in the fresh cilantro and feta cheese (if using).

            Chill and Serve: Allow the salad to sit for at least 15-30 minutes at room temperature, or refrigerate for an hour to let the flavors meld together. Serve chilled or at room temperature.
