Sweet Corn & Cheddar Quiche

1 pre-made pie crust (9-inch)

2 cups fresh sweet corn kernels (or frozen, thawed)

1 cup sharp cheddar cheese, shredded

1/2 cup milk

1/2 cup heavy cream

4 large eggs

1 small onion, finely chopped

2 tablespoons unsalted butter

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon paprika (optional)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pie Crust: If using a homemade pie crust, roll it out and fit it into a 9-inch pie dish. Crimp the edges and refrigerate while preparing the filling.

      Sauté the Onion: In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Remove from heat and set aside to cool.

        Mix the Filling: In a large mixing bowl, whisk together the eggs, milk, heavy cream, salt, black pepper, and paprika (if using) until well combined. Stir in the sautéed onions and sweet corn kernels.
