4 ears of fresh sweet corn, husked and cut into thirds

8 slices of thick-cut bacon, chopped into small pieces

1 medium red onion, diced

1 red bell pepper, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

¼ cup fresh parsley, chopped (for garnish)

Optional: 1 teaspoon chili powder (for a spicy kick)

Instructions
 

Prepare the Foil Sheets: Lay out four pieces of heavy-duty aluminum foil, each approximately 12x12 inches.

    Mix Ingredients: In a large mixing bowl, combine the corn pieces, chopped bacon, red onion, red bell pepper, garlic, olive oil, smoked paprika, salt, and black pepper. If you’re using chili powder, add it as well. Toss everything together until well combined.

      Divide Mixture: Evenly divide the corn and bacon mixture among the four pieces of foil.

        Seal the Packets: Fold the sides of each foil piece in towards the center, then fold over the top to create a sealed packet. Make sure to leave some space inside for steam to circulate.

          Cook the Packets: Preheat your grill to medium heat (about 350°F). Place the foil packets directly on the grill grates and cook for 20-25 minutes, turning them halfway through, until the corn is tender and the bacon is crispy.

            Check and Serve: Carefully remove the packets from the grill (they will be hot!). Open them with caution to avoid steam burns. Sprinkle with fresh parsley before serving.
