Sweet Corn and Chive Fritter Cakes

1 cup fresh sweet corn kernels (about 2 ears of corn)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup milk

2 large eggs

1/4 cup finely chopped fresh chives

1 small red bell pepper, diced

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil (for frying)

Optional: sour cream or yogurt for serving

Prepare the Corn: If using fresh corn, carefully cut the kernels off the cobs and set aside. If using frozen corn, ensure it is thawed and drained.

    Mix the Dry Ingredients: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, baking soda, garlic powder, onion powder, salt, and pepper. Whisk together until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the eggs and then mix in the milk. Stir in the chopped chives and diced red bell pepper.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and fold gently to combine. Then, add in the sweet corn and stir until evenly distributed. The batter should be thick but spoonable.

          Heat the Oil: In a large skillet, heat the olive oil over medium heat until shimmering.

            Fry the Fritter Cakes: Using a measuring cup or large spoon, scoop about 1/4 cup of batter for each fritter into the hot skillet. Flatten them slightly for even cooking. You can fit about 3-4 fritters in the skillet, depending on its size.

              Cook Until Golden: Fry for about 3-4 minutes on one side or until golden brown, then carefully flip and cook for another 3-4 minutes on the other side. Adjust the heat as needed to prevent burning.

                Drain Excess Oil: Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
