Ingredients

2 cups of Greek yogurt (plain or vanilla)

1 cup shredded unsweetened coconut

1/2 cup honey or maple syrup

1/2 cup almond slices (or any nut of your choice)

1/4 cup dried fruits (like cranberries or apricots), chopped

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Pinch of salt

1/2 cup dark chocolate chips (for drizzling, optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, cinnamon (if using), and a pinch of salt. Stir until well mixed and creamy.

Add Coconut and Nuts: Gently fold in the shredded coconut, almond slices, and dried fruits to the yogurt mixture until evenly distributed.

Form Clusters: Line a baking sheet with parchment paper. Using a spoon or ice cream scoop, drop tablespoon-sized amounts of the yogurt mixture onto the parchment paper, forming small clusters. Aim for about 12-16 clusters, spacing them a few inches apart.

Freeze: Place the baking sheet in the freezer for about 2-3 hours, or until the clusters are completely frozen.

Drizzle Chocolate (Optional): If you’re using chocolate, melt the dark chocolate chips in the microwave or a double boiler until smooth. Once the clusters are frozen, remove them from the freezer and drizzle the melted chocolate over the top of each cluster.

Final Freeze: Return the clusters to the freezer for an additional 30 minutes to allow the chocolate to set.

Serve and Enjoy: Once the chocolate is firm, your Sweet Coconut Yogurt Clusters are ready to serve! Enjoy them as a refreshing snack or dessert, straight from the freezer. Keep any leftovers in an airtight container in the freezer for up to a month.
