Sweet Cinnamon Apple Bites

2 medium-sized apples (Granny Smith or Honeycrisp work well)

1 cup of rolled oats

1/2 cup of almond flour (or all-purpose flour)

1/4 cup of brown sugar (packed)

1 tsp of ground cinnamon

1/4 tsp of nutmeg (optional)

1/4 cup of melted coconut oil (or unsalted butter)

1/4 cup of maple syrup (or honey)

1/2 tsp of vanilla extract

Pinch of salt

1/4 cup of chopped walnuts or pecans (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the apples: Core the apples and cut them into thin slices, about 1/4 inch thick. If you prefer, you can peel them, but leaving the skin adds extra nutrients and a nice texture.

      Mix dry ingredients: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, cinnamon, nutmeg (if using), and the pinch of salt. Stir well to ensure even distribution of the spices.

        Combine wet ingredients: In another bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well combined.

          Combine everything: Pour the wet mixture into the bowl with the dry ingredients. Stir until the mixture is well-coated and crumbly. If you’re adding nuts, fold them in at this stage.

            Assemble the bites: On the prepared baking sheet, arrange the apple slices in a single layer. Spoon the oat mixture generously over each apple slice, ensuring they are well-covered.
