Sweet Chocolate Date Truffles

1 cup Medjool dates, pitted

1 cup raw almonds (or nut of your choice)

1/2 cup unsweetened cocoa powder

1/4 cup coconut flour (or finely shredded unsweetened coconut)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/3 cup dark chocolate chips (vegan if desired)

2 tablespoons coconut oil (or any neutral oil)

Optional toppings: crushed nuts, cocoa powder, shredded coconut, or chia seeds

Prepare the Dates: In a food processor, combine the pitted Medjool dates and raw almonds. Pulse until finely chopped and well-blended, creating a sticky mixture.

    Mix Ingredients: Add the unsweetened cocoa powder, coconut flour, vanilla extract, and sea salt to the date-almond mixture. Process until everything is well combined and forms a cohesive dough. If the mixture is too dry, add a teaspoon of water or more dates until it holds together.

      Chill the Mixture: Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for about 30 minutes. This helps the mixture firm up, making it easier to roll into truffles.

        Melt the Chocolate: While the mixture is chilling, melt the dark chocolate chips with coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until completely melted and smooth.

          Form the Truffles: Once the mixture has chilled, take small portions (about 1 tablespoon each) and roll them into balls using your hands. Place the formed truffles on a parchment-lined baking sheet.

            Coat with Chocolate: Dip each truffle in the melted chocolate, using a fork to lift and allow excess chocolate to drip off. Return the coated truffles to the parchment-lined sheet.

              Add Toppings: While the chocolate is still wet, sprinkle desired toppings like crushed nuts, cocoa powder, or shredded coconut on top of each truffle.

                Set the Truffles: Place the truffles in the fridge for about 15-20 minutes until the chocolate coating is set.
